Juno Risotto

For days now, meteorologists have been detailing the impact that Winter Storm Juno will have on the east coast. The eastern shore itself was estimated to accumulate up to 7 inches of snow!! We interns love the snow, so you can only imagine our excitement.

To celebrate the impending weather system, Megan and I decided to make a Tomato-Basil and Spinach Risotto. We found that we already had most of the ingredients, we just needed basil, spinach, shallots, and arborio rice!

Risotto is a traditional northern Italian dish that is generally served as a first course in a meal. It is composed of a specific rice that readily absorbs liquids and results in a creamy, sticky texture when prepared. There are a ton of tasty combinations that you can meld together with risotto, its a great dish!

After braving the grocery store to procure our ingredients, I chopped,  and Megan stirred; 30 minutes later, we had an amazing risotto! The recipe we used worked wonderfully, and can be found at http://iowagirleats.com/2013/02/18/tomato-basil-spinach-risotto/

This was a warm, and filling dish, perfect for a winter night! We will certainly be making this again 🙂
